
Sponge cake with boiled condensed milk

Homemade baked goods for tea. A sponge cake with boiled condensed milk is one of the simplest and easiest homemade cakes to prepare. This recipe uses a “chiffon sponge cake,” which has long been among my favorites. It always turns out beautiful and airy, and it is very easy to make. Prepare the ingredients.

Preheat the oven right away to 180 degrees. Prepare a 22 cm diameter baking tin. Make a “French coat”: grease with butter, dust with flour, and shake off the excess flour.

Separate the whites and yolks of 5 eggs; first beat the whites into a fluffy foam with a pinch of salt, then, gradually adding sugar, beat until stiff peaks form.

Add the egg yolks to the egg white mixture one at a time, beating well after each yolk. After adding the last yolk, beat for at least two more minutes.

Mix the flour and starch.

At once add the flour-and-starch mixture to the beaten mixture and mix quickly and vigorously until smooth. Pour the batter into the prepared pan. Bake in a preheated oven at 180 degrees for 40 minutes.

Cool the finished sponge cake to room temperature.

If time allows, it is best to let the sponge cake rest for 3–6 hours wrapped in plastic wrap.

To make the cream, put boiled condensed milk in a bowl and add soft butter, cut into pieces.

Whisk the cream until smooth and homogeneous.

Beat 2 egg whites with sugar first until light and foamy, then continue beating while gradually adding sugar until stiff peaks form; add 1 tablespoon lemon juice.

On baking parchment, draw a circle 20 cm in diameter, pipe the whipped egg white mixture onto the circle, and pipe some small meringues for decoration. Bake-dry in the oven at 50 degrees for 1 hour. Trim the meringue to a 20 cm pan diameter. Crumble the leftover meringue for decorating the cake.

Before assembling the cake, cut the sponge into three layers. The bottom layer will be the top of the cake, as it is more even.

Place the first cake layer and spread it with cream.

Place the next layer, spread with cream, and add the meringue layer. Spread with cream again and sprinkle with chopped walnut kernels, which are best lightly toasted beforehand in a dry skillet.

Spread the top and sides of the cake with cream; sprinkle the sides with meringue crumbs.
