
Sponge cake with cottage cheese
Description
The recipe won't take much time. You can use cottage cheese in a sponge cake either as a cream, which works perfectly for spreading and filling the layers, or directly in the batter. I've presented the first option here, as I really love cottage cheese cream. Be careful when adding cottage cheese or any additional ingredients to the sponge cake batter, as it is quite delicate.

Step 1

Separate the egg whites from the yolks. This method is used to make a classic sponge cake. If this step intimidates you, you can beat the eggs whole. In that case, add a leavening agent to the batter. Beat the egg whites with one-third of a cup of sugar until stiff peaks form.

Mix the sifted flour with the remaining third of a cup of sugar. Add a cup of flour, half a packet of vanilla sugar, and rub thoroughly. Gradually add the whipped egg whites, stirring gently with a spoon or whisk. Do not use a mixer.

Pour the sponge cake batter into a greased baking pan, carefully smoothing it out. Bake in the oven at 180 degrees Celsius for 30 minutes. Check for doneness with a toothpick or skewer. Once baked, turn the cake upside down and let it cool in that position without removing it from the pan. Then, slice the cake horizontally with a sharp knife to make two layers.

Let's move on to the cream. Place the cottage cheese in a blender along with the sugar and remaining vanilla. Add the sour cream and blend until you get a thick creamy mixture. You can also use a mixer.

Soak the gelatin in cold water. When it swells, heat it to 70 degrees, stirring until completely dissolved. Pour the warm gelatin into the cottage cheese cream and blend using the same blender. When the cream starts to set slightly, spread it over the bottom cake layer. Level it and cover with the second cake layer. Refrigerate for several hours until the cream fully sets.

We take the ready cooled cake out of the refrigerator and serve it. It can be decorated on top with powdered sugar, cocoa, cinnamon, or grated chocolate. This wonderful dessert is perfect for a festive table or simply with tea. I highly recommend it for boosting your mood!
