Instructions
- 1
Step 1

1. First of all, you need to prepare the soaking syrup. In this case, it's a citrus syrup.
- 2
Step 2

2. In a small saucepan, add sugar and pour in water.
- 3
Step 3

3. While the syrup is coming to a boil, peel the zest from previously washed lemons and oranges. Add the zest to the boiling syrup, reduce the heat to minimum, and let the ingredients simmer.
- 4
Step 4

4. Boil this syrup for at least 1.5 hours. Then carefully drain the syrup and set aside the citrus peel (it will be used later).
- 5
Step 5

5. Now you can proceed to prepare the cake layer. In this case, it will be chocolate.
- 6
Step 6

6. Put 3 eggs, butter, sugar, sifted flour, baking powder, and cocoa into a deep bowl. Pour in the milk. Add vanilla or almond extract and knead the dough.
- 7
Step 7

7. Separately beat 12 egg whites with a pinch of salt into a stiff foam. Add them to the batter and gently mix.
- 8
Step 8

8. From the prepared dough, you can bake two layers. Pour the batter into a pan and bake in a preheated oven.
- 9
Step 9

9. Depending on the size of the pan, bake the cake layer for 25 to 35 minutes. Carefully remove it from the pan and let it cool on a wire rack. Only after it has completely cooled, cut each cake layer in half with a sharp knife.
- 10
Step 10

10. Brush each half with syrup. If desired, enhance this simple syrup-soaked sponge cake recipe with a light alcohol, such as liqueur.
- 11
Step 11

11. To prepare the cottage cheese filling, pass the cottage cheese through a sieve and add a little vanilla extract.
- 12
Step 12

12. Cut the candied citrus fruits from the syrup into pieces and add them next. Grind the nuts (in this case, pistachios, but you can use any other nuts) and grate the chocolate finely. Mix everything thoroughly until uniform. Add sugar to taste if necessary.
- 13
Step 13

13. Each cake layer should be spread with the prepared filling; this will make the soaked sponge cake even juicier and more tender.
- 14
Step 14

14. All that's left is to prepare the glaze. It's quite simple: cream, melted chocolate, and butter.
- 15
Step 15

15. Frost the sides of the cake first with the icing.
- 16
Step 16

16. Use the remaining glaze to cover the top. Smooth out the glaze and refrigerate the cake for at least 1-2 hours.
- 17
Step 17

17. Here's a variation on how to make a soaked sponge cake. Decorate it to your liking before serving. Enjoy!
