
Sponge cake with buttercream and fruits
Description
Delicious baked goods for the whole family. Of course, many older people will remember the butter cakes made in the Soviet Union. On one hand, they were tasty, but there wasn't much variety in desserts, and such cakes became rather monotonous over time. However, revisiting such a recipe and improving it can make the dish "shine" with new "colors" and flavor nuances. The baked goods are ready. Serve at the table.

First, prepare the dough. Take 4 eggs. Separate the whites from the yolks. Beat the whites until stiff, gradually adding 2/3 cup of sugar. In another bowl, beat the yolks with 1/3 cup of sugar. Then combine both mixtures with a spatula.

Now sift the flour into the egg mixture, stirring constantly. Preheat the oven to 190 degrees. Pour the batter onto parchment paper in a baking pan and bake the sponge cake for about 40 minutes, but it's better to check for doneness, as ovens vary.

While the biscuit is baking, prepare the fruit filling. Dissolve gelatin in 100 g of water. Once it swells, gently heat until fully dissolved, then cool. Peel the kiwi and slice into wedges. Pour the gelatin over the fruit and refrigerate for 20 minutes.

Now prepare the syrup: combine 100 g of sugar and water, boil for 5 minutes, then add the juice. Do not let the liquid cool.

For the cream, beat 2 eggs with a whisk, then add 75 g of sugar. Place the mixture on the stove and cook for 5 minutes, then remove from heat and let it cool. In another bowl, thoroughly cream the butter until pale, then add the cooled egg mixture. Mix well.

Cool the finished biscuit. Cut off the top layer (crust), chop it finely and dry slightly in the oven. Then cut the biscuit into 2 or 3 layers, moisten them with syrup. Let stand for 5 minutes.

Spread the cake layers with the prepared cream and stack them, alternating with gelatin-set kiwi. Then cover the cake with the remaining cream on all sides and sprinkle with crumbs made from biscuit pieces dried in the oven. Decorate the top with cherries and kiwi.
