
Biscuit cake with condensed milk cream
Description
The recipe won't take much time. If you like salted or smoked fish, you can add it to the boiled beet filling. For vegetarians, offer tartlets with cheese and vegetables, and for a more vibrant and colorful appetizer, use red or black caviar, or even a mix of both. Garnish the tartlets with leafy lettuce, parsley, dill, etc. Serve with tea or coffee.

Prepare the listed ingredients. Take the butter out of the refrigerator and leave it at room temperature so it can be easily cut for the cream.

Place the chicken eggs into the bowl of a mixer or food processor. If the eggs are small, use 4 pieces. Add granulated sugar and salt. You can also add a pinch of vanilla sugar. Beat everything for 3-4 minutes at the highest speed until the mixture increases several times in volume and becomes airy.

Add the high-grade wheat flour and baking powder in parts. Incorporate them into the egg mixture without overmixing, to avoid releasing the air bubbles. You should end up with a smooth sponge cake batter.

Preheat the oven to 180 degrees. Grease the baking pan with oil and place the dough into it. Put the pan on the middle rack and bake the sponge cake for 35–40 minutes. Carefully remove the pan and place it on its side to prevent the cake from collapsing. Let it cool for about half an hour, then remove from the pan and continue cooling completely, either at room temperature or in the refrigerator. Do not apply cream to a warm cake, otherwise it will melt and run. It is advisable to bake the cake in advance and cool it thoroughly before applying the cream.

When the sponge cake is cold, cut it into 3-4 layers. Choose the number of layers according to your preference.

While the sponge cake is cooling, place the sliced butter into the bowl of a food processor, add powdered sugar. You can pour in 1 tsp of lemon juice if you like a tangy flavor in desserts. Beat everything for 3-4 minutes.

Then start adding the condensed milk, continuing to whisk the mixture. You will get a light, delicious cream. Refrigerate it for half an hour.

Place a quarter of the cream onto the bottom cake layer and spread it evenly. Then cover with another cake layer and spread again, and so on, until the entire cake is assembled. Refrigerate the cake for about half an hour to let it soak. You can also leave it overnight.

Spread the remaining cream over the cake and sprinkle with coconut flakes or decorate with fruits, berries. Use your imagination.
