Biscuit cake with banana and kiwi

Description

The baking is simple and quick. No celebration is complete without a cake, but it's even better when it's homemade. I love baking cakes: the kitchen fills with a wonderful aroma, and there are always helpers around. Serve warm or chilled. Perfect with tea.

    Using a mixer, beat the eggs with sugar until stiff peaks form.

    Add the flour and mix briefly at low speed with a mixer. If you're afraid the biscuit won't rise, stir with a wooden spoon.

    Line the baking pan with parchment paper and lightly grease it with vegetable oil. Pour in the batter and bake at 180°C for 40–50 minutes.

    We remove the ready-made biscuit from the mold and let it cool. Meanwhile, prepare the syrup: mix slightly warm boiled water with sugar. Stir until the sugar dissolves.

    We carefully cut the cooled biscuit into 2 parts and lightly soak each part with syrup.

    Next, prepare the cream: mix sour cream and condensed milk, beat with a mixer or simply stir well with a spoon.

    Peel the kiwi and bananas and slice them thinly into rounds.

    Place the first cake layer on a large plate, spread with cream, and add bananas and kiwi. Top with the second cake layer and again add cream and fruits.

    Spread the cream over the entire cake on all sides and smooth the surface of the cake.

    Let the finished cake soak for a couple of hours, or overnight if you have time. Then decorate the cake with kiwi slices and sprinkle with coconut flakes and cookie crumbs.
