
Sponge cake made with fruit juice
Description
Homemade baked goods for tea. I easily bought fruit juice at the store (I used mixed fruit). Using it, I make my own sponge cake and butter custard cream (adding the juice to it). I always let this dessert sit for several hours before serving, so the cake layers soak up the juice well. Serve with tea or coffee.

1. Sift the flour into a bowl or glass, add starch and baking powder, mix.

2. Sponge cake: break the eggs into a bowl, add salt, and first mix at low speed, then increase the mixer speed until a fluffy, foamy mass forms.

3. Gradually add granulated sugar in portions and beat until a creamy mixture forms. Then add the juice and beat for no more than two minutes.

4. Add the previously prepared flour mixture to the beaten eggs in portions, incorporating each portion with a spatula.

5. Line the pan with parchment paper, pour in the batter. Bake for about 45 minutes at 180 degrees.

6. Remove the finished sponge cake from the oven and leave it in the mold until cooled, then take it out and let it rest for another four hours.

7. For the cream: break the eggs into a bowl, add sugar and starch, and mix. Pour the juice into a saucepan and place over heat, bring to a boil, then slowly pour it in a thin stream into the eggs.

8. Pour the resulting mixture back into the saucepan where you heated the juice, and place it over low heat. Cook until a thick consistency forms, stirring constantly. Remove the saucepan and let the mixture cool to room temperature.

9. Beat the softened butter with a mixer, then add the cooled cream one tablespoon at a time, continuing to beat.

10. Cut the sponge cake into 2 layers, soak both layers with juice, spread the prepared cream on the bottom layer, then cover with the second layer and spread cream on the top and sides.

11. For the glaze: melt the chocolate with butter in a saucepan. Pour it over the cake and decorate with ready-made meringues. Let it sit for at least 1 hour before serving.
