Sponge cake roll with cream cheese

Description

Delicious baked goods for the whole family. The roll turns out very soft and tender. Cream cheese frosting holds it well and complements it beautifully. If you want a touch of tartness, add strips of tart jam or fruit on top of the cream. Take the cream cheese out of the refrigerator ahead of time, or it may curdle into flakes when whipped. Serve cooled or slightly warm.

    Prepare all the ingredients you need to make a sponge roll with cream cheese. Mix the flour with cocoa powder, and separate the eggs into whites and yolks.

    Pour the egg whites into a deep bowl, add a pinch of salt, and beat to soft peaks. While continuing to beat, add the sugar in portions. Beat the egg whites with the sugar until stiff peaks form.

    Add the egg yolks to the beaten egg whites one at a time, whisking until smooth after each addition. The mixture will become slightly thinner, but that is normal.

    Add the vanilla sugar to the egg mixture, sift in the flour with the cocoa, and fold gently from top to bottom until the batter is smooth and airy.

    Line a baking sheet with parchment paper, transfer the dough onto it, and spread it evenly. Place the baking sheet in a hot oven and bake the sponge cake for 8–10 minutes at 200°C.

    Whisk the cream with the powdered sugar until soft peaks form. Mash the cream cheese with a fork, add it to the cream, and whip until smooth. Do not whip the mixture for long, or it may curdle and turn grainy.
