1. Prepare the ingredients, let's get started! You will also need parchment paper and a rectangular or square baking tray.

2. Crack 3 eggs into the mixer bowl, add vanilla sugar or a couple of drops of vanilla extract, and lemon juice. Beat until the first foam appears.

3. Add all the sugar and increase the speed to maximum. Beat for 7-10 minutes.

4. When the mixture has increased well in volume and lightened in color, you can turn off the mixer.

5. Preheat the oven to 200 degrees. Add flour to the egg mixture and stir with a spatula or mix at low speed using a mixer.

6. Line a baking sheet with parchment paper. Pour the batter onto it and spread it evenly with a spatula. The thickness of the batter should not exceed 5 mm.

7. Bake the sponge cake for 10-12 minutes until slightly golden, do not overbake!

8. Immediately remove the ready cake from the parchment paper (while still hot). Soak it with the syrup (mix cold water with lemon juice, and use a silicone brush to moisten the sponge cake).

9. Roll the sponge cake into a roll together with the parchment paper. Leave until completely cooled.

10. Unroll the roll. Spread with condensed milk and roll it up again into a roll, but this time without parchment paper.

11. The roll is ready. Decorate it as you like. You can serve the roll immediately, but I prefer it after it has chilled in the refrigerator for a couple of hours.

12. I dusted it with powdered sugar and decorated it with viburnum berries. You can drizzle melted chocolate or condensed milk over it, but in my opinion, the roll is already very sweet, and the tart berries complemented it perfectly.
