
Apple sponge cake
Description
Homemade pastry for tea. Preparing the pie filling: wash the apples, peel them, cut into 4 parts and remove the core. Slice the apples thinly, place in a bowl and sprinkle with lemon juice to prevent browning. To prepare the dough: break the eggs (yolk and white together) into a bowl, add sugar and beat with a mixer until foamy. Carefully sift flour into the bowl with the beaten eggs and mix with a tablespoon until a smooth mixture forms. Add vanilla sugar and cinnamon to taste, as well as one teaspoon of baking soda neutralized with vinegar or lemon juice—mix thoroughly. Grease the pie baking pan with butter. Spread half of the dough on the bottom, then add a layer of apples and cover with the remaining dough. Bake the pie in a preheated oven at 180°C (350°F) for 35–40 minutes. If the top starts browning (burning) too early, remove the pie and cover it with foil. Serve cooled or slightly warm.
