Sponge waffles

Description

I bake waffles using this recipe regularly and I’m very happy with the results. They might taste not sweet enough for you—or too sweet—so adjust the sugar amount yourself. While baking, the waffles release cleanly from the plates and don’t stick at all; the dough is very easy to work with.

    Prepare all the necessary ingredients.

    Carefully separate the eggs into yolks and whites, putting each into its own clean, dry bowl.

    Place the egg yolks in a large bowl, add sugar and vanillin.

    Using a mixer, beat the egg yolks with sugar until the mixture turns pale.

    In a separate clean and dry bowl, put the egg whites and add a pinch of salt. Beat the egg whites until stiff peaks form. If you turn the bowl with the egg white mixture upside down, the whites will stay put—that means they are beaten enough.

    Transfer the beaten egg whites into the bowl with the yolk mixture. With a spatula, using gentle folding motions and keeping the mixture airy, fold the egg whites into the yolks until fully combined.

    Sift the flour in batches, folding it in with a spatula using gentle strokes.

    In the end, the dough should turn out very airy, like sponge cake batter.

    Preheat the electric waffle maker; grease the cooking plates with a thin layer of vegetable oil using a silicone pastry brush. I usually grease only once. Place one tablespoon of sponge cake batter on each cooking surface of the electric waffle maker. Bake the waffles for 3–4 minutes.

    Serve the finished waffles with your favourite syrup and berries.
