Sponge cookies
Description
Homemade treats for tea. Madeleine cookies are among the most delicate and airy, as they are made from sponge cake batter poured into special molds. This is a traditional French recipe, but it can be slightly modified—for example, by adding cream to the warm batter. I don't have special madeleine molds, so I used small cupcake molds instead. You'll find out more below. Serve warm or chilled. Perfect with tea.
