
Sponge cookies
Description
Homemade baked goods for tea. You can make these cookies medium-sized, pack them in an individual bag, tie it up nicely, and give them as a little gift—for example, to colleagues at work or to children at daycare. You can decorate the face with any suitable ingredients and even colored icing. To keep the shavings from scattering all over the cookie when dusting, simply take a stiff sheet of paper and use it to shield the rest. Serve cooled or slightly warm.

Prepare all the ingredients you need for sponge cookies “Ded Moroz”. Turn the oven on right away so it can preheat to 180°C.

Break the eggs into a bowl and add granulated sugar and vanilla sugar.

Beat the eggs with sugar until fluffy; the mixture should turn pale and increase in volume by 2–3 times.

Mix the flour with baking powder and sift. Add it to the egg mixture in portions and stir gently until the batter is smooth and lump-free.

Transfer the dough to a piping bag and cut off the tip.

Line a baking sheet with parchment paper or a silicone mat and pipe round flat patties, spacing them apart.

Put the baking sheet in the oven and bake at 180°C for 12–15 minutes. Take out the finished cookies and cool them completely.

Prepare everything for decorating the cookies. Use marshmallows to make balls for the pom-poms. Use gummy candy for the noses and mouths.

Melt the white chocolate in a double boiler until smooth, making sure the water does not touch the bowl with the chocolate. Brush each cookie with a pastry brush. On top, make a hat from red coconut flakes and a beard with moustaches from white coconut flakes; attach the nose and mouth from gummy candy. Make the eyes from chocolate drops and the cheeks from red dragées. Dip your marshmallow piece cut-side down first in chocolate, then in white coconut flakes, and place it on the hat. If needed, dip the other cut side in chocolate as well.
