
Victoria sponge cake
Description
Delicious baked goods for the whole family. I was never much of a sponge cake fan… until I tried Victoria sponge. From now on in our household, Victoria sponge is our number-one bake—loved by everyone, always welcome, and never gets old. By the way, Victoria sponge is usually baked as one large cake, but we prefer to make small, individual portions—it’s easier to serve and looks nicer. Of course, nothing stops you from using this same recipe to make a classic, traditional Victoria sponge. Serve warm or chilled. Perfect with tea.

In a bowl, mix sugar, 200 g butter, eggs, flour, baking soda, milk, and baking powder. Beat with a mixer until smooth.

Fill the baking molds with the resulting dough.

Bake for 6–8 minutes in an oven preheated to 190°C.

Now let’s make the filling for our sponge cakes. To do this, beat the remaining butter and powdered sugar until the mixture is smooth and fluffy.

Cut each sponge cake in half (crosswise).

It's time to assemble our sponge cakes. Take half a sponge cake, spread a little whipped buttercream and a little raspberry jam on it, then cover with the other half like a sandwich.

Dust with powdered sugar, garnish with fresh raspberries, and serve. :)
