
Sponge cake in an air fryer

Prepare all the ingredients according to the list. Separate the eggs into whites and yolks. The egg whites should be chilled.

In a deep bowl, combine the egg yolks and vanillin. Mix well.

Whisk the egg whites with a pinch of salt until stiff peaks form, gradually adding the sugar. If using a stand mixer, you can add all the sugar at once.

Gradually fold the beaten egg whites into the yolks. I added them in three batches.

Gently fold with a spatula or spoon from bottom to top — not with a mixer! Mix for no more than 2 minutes.

Separately combine the milk and vegetable oil. Add a little sponge cake batter.

The ingredient amounts are for a 16 cm sponge cake. I use a pastry ring whose base I wrap tightly in foil. Grease the base with vegetable oil and dust with flour or semolina; do not grease the sides. Pour the batter into the mold and put it in the air fryer basket.

Mix the dough in circular motions using a wooden skewer.

Place an oven rack on top with a sheet of parchment paper secured underneath it; otherwise the hot-air stream will scorch the cake layer on the surface. Set the temperature to 180 degrees and bake for 10 minutes, then lower to 170 degrees and bake for another 30 minutes.

At this stage I tested the sponge cake for doneness with a wooden skewer; the centre was still slightly underdone. I set the temperature to 160°C and baked for another 25 minutes, covering it with parchment paper in the same way. Everyone’s oven is different, so the first time around it’s best to check at this stage too.

Carefully remove the sponge cake from the pan, turn it upside down, and place it on a rack until completely cool. This will help the sponge cake keep its shape.
