This biscuit with currant jam turns out not only tasty but also beautifully patterned when sliced. If you'd like to make it with cream, you can spread the middle with regular jam or prepare any cream of your choice. The special feature of this homemade treat is that it doesn't require cream, as the jam inside the dough provides a unique flavor. Serve it with tea or coffee.

    1. The kefir sponge cake is prepared in a traditional way. First, beat the eggs (using a whisk or mixer). The mixture should become foamy. Gradually add sugar and continue beating.

    2. Add the blackcurrant jam and continue beating. You can use any jam you prefer. This time, I wanted to treat my guests to a beautiful sponge cake with the unique and delicious flavor that blackcurrant provides.

    4. Finally, add the baking soda. There's no need to pre-neutralize it, as it will react on its own in the acidic kefir environment. Mix the batter well and pour it into a greased baking pan. A round pan is preferable.
