
Jam Sponge Cake

Perfectly complements tea and coffee. The sponge cake made with jam has a vivid aroma and flavor, making it superior to ordinary egg-based sponge cakes.

1. For the sponge cake, I chose the most aromatic jam. Prepare the remaining ingredients. No sugar is needed because of the very sweet jam.

2. Separate the egg white from the yolk and beat it until stiff peaks form.

3. Mix the jam with the yolk.

4. Add the egg white, gently folding it in.

5. It should result in a very light and airy mixture.

6. Add flour and baking soda. If the jam is completely without acidity, add a little lemon juice or table vinegar to enhance the reaction with the baking soda.

8. Pour the batter into a greased (with butter or vegetable oil) pan, spreading it evenly. Place in the oven. Bake at 200 degrees for 30-35 minutes.

9. Let the finished sponge cake cool in the pan, then remove it. Decorate to taste; I simply glazed the top with jam. Enjoy!
