
Sponge cake with cottage cheese cream
Description
The dish is prepared without unnecessary complications. The key to a good sponge cake is to whisk the yolks and egg whites separately and then incorporate them into the batter one after another. Also, the more eggs you use, the better the sponge turns out—5 eggs is the optimal amount. To prepare the sponge cake with cottage cheese cream, you'll need high-fat cottage cheese (or at least 9%) and heavy cream (at least 33% fat). For soaking, use any liqueur—orange, cherry, raspberry, for example. Good luck! The finished dessert is ready to be served.

Start with the dough: mix the flour with cocoa and baking powder.

Beat softened butter with powdered sugar.

Rub the yolks with half of the sugar. Melt the chocolate over a water bath. Add the chocolate to the butter first, then the yolks, and mix everything well.

Add all the dry ingredients to the resulting butter-chocolate mixture. Mix well.

Beat the egg whites with the remaining sugar until forming a white foam, then gently incorporate them into the batter.

Preheat the oven to 180 degrees. Place the biscuit dough into a baking pan, previously greased with a small piece of butter. Bake for 35–40 minutes (until done).

While the sponge cake is baking, prepare the cream. Blend the cottage cheese, orange zest, and powdered sugar with a blender until smooth.

Whip the cream until thick white foam forms.

Mix the cream with the cottage cheese mixture—and the cottage cheese cream is ready!

Let the baked sponge cake cool, then cut it into two or three layers if possible. Lightly moisten the layers with liqueur or your favorite syrup. Spread the cream evenly on top.

Assemble all the cake layers and decorate as desired. In my opinion, chocolate glaze and chocolate sprinkles are the perfect choice. Since I had orange liqueur for soaking, I decorated the finished biscuit with cottage cheese cream using orange slices.
