
Sponge cake with soda
Description
Tasty baked goods for the whole family. Baking a sponge cake is very easy. The cake turns out fluffy, tender, and delicious. To prevent the sponge from sinking, as soon as you take it out of the oven, flip the pan upside down and place it on three glasses or cups. Keep it like this until the sponge is completely cooled. Good luck. Serve warm or chilled. Perfect with tea.

Prepare the ingredients for making the sponge cake.

Crack the eggs into a deep bowl. First wash them with warm water.

Whisk lightly with a mixer.

Gradually add the sugar, continue beating the eggs.

Whisk until the mixture increases in volume by 3–4 times and becomes fluffy. This will take at least 8–10 minutes.

Then add the baking soda, neutralized with vinegar or lemon juice, to the bowl.

Gradually add the sifted flour, and mix the dough very carefully.

Place the dough in a pan lined with parchment paper. The sides of the pan do not need to be greased. The diameter of my pan is 20 centimeters.

Bake the sponge cake in an oven preheated to 175 °C for 40‑45 minutes. Check the doneness of the sponge with a dry wooden skewer. When inserting it into the middle of the sponge, it should come out dry.

Cut the sponge cake into three layers lengthwise, and layer the layers with cream. Or simply slice it and serve with tea.
