
Poppy Seed Sponge Cake

First, you need to prepare the poppy seeds for the biscuit. To do this, pour boiling water over them. If you are not limited by time, it's better to place the poppy seeds in a saucepan, cover with water, and simmer over low heat for about half an hour. Then strain the poppy seeds and drain them in a sieve or on a towel to remove excess liquid.

Take raw chicken eggs and separate the yolks from the whites as carefully as possible. Place the yolks in a bowl, and put the whites into a tall plastic or glass container for easy beating. Add a pinch of citric acid to the whites.

Place the egg yolks in a separate bowl and add sugar. If you prefer sweeter dishes, simply increase the amount of sugar, but don't overdo it, otherwise your sponge cake won't rise.

Beat the egg yolks with sugar using a mixer, first at a slow speed and then at a high speed. Gradually add the poppy seeds, vegetable oil, boiled water, salt, and vanilla. Continue beating the mixture until it at least doubles in volume. Then add the sifted flour and baking powder.

Now it's time for the egg whites. They need to be beaten with citric acid for ten minutes, until stiff peaks form. For this, the egg whites must be thoroughly chilled.

Now, using a wooden spatula, transfer the egg white mixture into the bowl where you whipped the yolks with sugar. Gently mix in a clockwise motion to fully incorporate the beaten egg whites into the batter. The mixture should become uniform. Avoid overmixing, otherwise the biscuit won't rise properly in the oven.

Pour the batter into a greased baking pan. Preheat the oven to 180 degrees Celsius. Place the pan in the oven and bake the sponge cake for about half an hour. To check if it's fully baked, pierce it with a toothpick. If the toothpick comes out dry, your cake layer is ready. Remove the sponge cake from the oven and let it cool before taking it out of the pan.
