
Sponge cake with candied fruit
Description
Homemade baking for tea. This dessert will be loved by children, but it will not only be a great addition to a cup of milk for breakfast or a snack, but also to morning coffee for adults. I reduced the ingredients and baked the sponge in a small pan 18 cm in diameter; if your pan is larger, increase the ingredients on the list exactly twofold. The height of the sponge in a 26‑cm pan will be 4 cm, and in a 24‑cm or smaller pan it will be correspondingly larger. It can be served with tea or coffee.

Prepare all the ingredients.

Beat the eggs with sugar until the volume increases 2–3 times.

Add vanillin, flour, starch, and baking powder.

Mix the dough with a spatula and add the melted and cooled butter.

Stir everything again and add candied fruit.

Pour the batter into a baking pan. I line the pan with parchment paper in advance, leaving the bottom and sides ungreased. Bake in the oven at 180 °C for about 30–40 minutes. You can test doneness with a wooden skewer.

Let the finished candied fruit sponge cake cool on a rack, then slice and serve.
