Sponge cake with orange zest

Description

Baking is simple and quick. Making an orange‑zest sponge cake is very easy; it rises well and has a porous, airy structure. If you plan to use it later for cakes, use a round pan with a diameter of 27–30 cm. Keep in mind that the smaller the pan, the higher the sponge will be. I baked it in the oven, but you can also bake it in a multicooker. Use the “Bake” setting and cook until the audible signal sounds. You can serve it with tea or coffee.

    Prepare all ingredients.

    In a deep bowl, combine the eggs and sugar.

    Whisk using a blender or mixer for 7–10 minutes until the volume increases by 2.5–3 times and a white airy foam appears.

    Add salt, vanilla, baking powder, and gradually incorporate the flour. Each time, stir the dough with a spatula using gentle motions from top to bottom.

    At the very end, add orange zest.

    Pour the batter into a baking pan, lining the bottom with parchment paper in advance. I don't grease either the paper or the pan. I have a rectangular pan, but if you plan to use the sponge cake later for making a cake, you can use a round one with a diameter of at least 27–30 cm.

    Bake the sponge cake in the oven at 180 °C for about 30 minutes. Check doneness with a wooden skewer or a toothpick.
