
Sponge cake with apricots
Description
Tasty baked goods for the whole family. The sponge cake bakes quite simply. Apricots can be fresh, frozen, or canned. In this case I prefer canned ones, because they contain less moisture, so there will be less in the batter. Baking time depends entirely on your oven. The sponge cake turns out tender, fluffy, not dry and very tasty. The bake is ready. Serve at the table.

Prepare the ingredients for making a sponge cake with apricots.

Crack the eggs into a deep bowl. It is advisable to wash them beforehand with warm water.

Beat the eggs with a mixer until the whites and yolks are combined.

Gradually add the sugar while continuously beating, and achieve an increase in volume by 3–4 times.

Add the baking powder, then gradually add the sifted flour.

Carefully mix the dough with a spatula.

Line the bottom of the pan with parchment paper. Do not grease the sides of the pan! Spread the dough. Slice the apricots into wedges and arrange them on the dough. The diameter of my pan is 20 centimeters.

Preheat the oven to 170‑175 °C and place the sponge cake inside. For the first 20 minutes try not to open the oven. Bake the sponge cake for 45‑50 minutes. Check doneness with a wooden skewer. When you insert it, the skewer should come out dry. To prevent the sponge cake from collapsing when you remove it from the oven, turn the pan upside down and set it on three tall cups or glasses. Keep it like this until the sponge cake is completely cooled.
