The recipe won't take much time. The "Perfect" sponge cake recipe is very simple. It will turn out perfectly for everyone if you follow the step‑by‑step instructions. Use the "Perfect" sponge as a base for a cake; the cream can be any kind: butter, chocolate, custard, any you like. It can be served with tea or coffee.

Prepare the ingredients.

Add cocoa powder, 200 g of sugar, water, and vegetable oil to the saucepan.

Heat while stirring, about to a temperature of 50‑60 °C, then let it cool slightly.

Add salt, baking soda, and baking powder to the flour, then sift the mixture.

Whisk the eggs with the remaining sugar (50 g) into a fluffy foam.

Pour the chocolate into the egg mixture, stir, and add the flour mixture. First mix with a silicone spatula, then finish with a mixer until homogeneous.

Prepare a baking pan, line the bottom with parchment paper, grease it with butter and lightly dust with flour. It's better to use a pan with a 24 cm diameter; my pan is slightly larger, its size is 27 cm.

Pour the batter into the pan, smooth it out. Bake the sponge at 170‑180 °C for 45‑50 minutes.

Cool the sponge cake on a rack; in principle, the baked good is self‑sufficient and can be eaten as is.

But you can go further and use the sponge cake as a base for a homemade cake. Prepare any cream, for example, a classic custard vanilla cream, cut the sponge cake into two parts. Spread half of the cream on the sponge cake, add berries or fruit.

Cover with the second half of the sponge cake, spread the remaining cream on top, garnish with any berries or fruits. Let the sponge cake rest for a while.
