Description

The baking is simple and quick. For making a kefir sponge cake in a multicooker, I recommend using low-fat kefir—1.5–2% fat is perfect. However, the cottage cheese should be richer in fat to prevent the batter from becoming too runny and crumbly. The most important thing when making a kefir sponge cake is to mix it thoroughly, so I suggest using a mixer or blender. If you don't have baking powder, you can add a teaspoon of baking soda. There's no need to pre-neutralize it—the kefir will react with the soda and neutralize it naturally.

    Using a blender, mix the eggs, sugar, and kefir.

    Add the cottage cheese and mix again. Then sift the flour into the same bowl, add the baking powder, and knead the dough. Optionally, add raisins or nuts if desired.

    You'll get a smooth, thick batter. Grease the multicooker mold with butter and spread the batter evenly. Bake in "Baking" mode for 65 minutes. Then add another 15 minutes in "Warming" mode—if the sponge cake isn't ready yet, check with a toothpick. While the cake is baking, prepare the icing, for example: melt chocolate bar with milk and powdered sugar (or simply use ready-made icing).
