
Classic sponge cake for a cake

The recipe won't take much time. A classic sponge cake is most often required for making a festive dessert. Many home cooks believe that baking a sponge cake at home is difficult, but they are mistaken. From this recipe, you will learn. Serve cooled or slightly warm.

Measure the required amount of flour, starch, and sugar. Take the eggs out of the refrigerator in advance; they should be at room temperature.

Separate the egg whites from the yolks. Beat the whites with a pinch of salt until foamy, then continue beating until stiff glossy peaks form, gradually adding sugar one tablespoon at a time.

Reduce the mixer speed and add the egg yolks one at a time. Add each subsequent yolk only after the previous one has fully blended with the egg whites.

Mix the sifted flour with starch and add it to the whipped egg mixture. Gently fold the batter from the bottom up with a spatula until smooth.

Line the bottom of a removable mold with parchment paper and carefully pour the batter into the mold.

Bake in a preheated oven at 170 degrees Celsius for 30-35 minutes, until a wooden skewer inserted comes out dry. Do not open the oven during the first 20 minutes. Then, drop the baked cake, together with the pan, from a height of at least 50 cm onto the floor.
