
Biscotti with tapenade
Description
The pastry is simple and quick to prepare. In its classic version, biscotti is a dessert, but if you add tapenade, you get a delicious and original appetizer. You can serve the cookies at a buffet or as an aperitif for a festive dinner. They are best enjoyed with a sauce, preferably after cooling down. Store them in a container with a lid. Serve warm or chilled. Perfect with tea.

1. Place the olives, mustard, lime juice, garlic, capers, anchovy fillet, almonds, 5 thyme sprigs, and olive oil into a food processor and blend until a paste forms.

2. In a bowl, beat the butter, then add the eggs and milk.

3. Slowly add the flour, baking powder, salt, and sugar, stirring constantly.

4. Add the thyme leaves and 1/3 of the prepared tapenade. Mix thoroughly.

5. Place the resulting dough onto a floured surface and shape it into a loaf.

6. Line a baking sheet with parchment paper and transfer the dough onto the sheet.

7. Place the baking sheet in a preheated oven at 175 degrees and bake for 30 minutes. Then remove the baked goods and reduce the oven temperature to 150 degrees.

8. Slice the loaf into 1 cm thick slices.

9. Place the biscotti pieces back on the baking sheet and return to the oven; bake for 30 minutes, then flip the pieces and bake for another 10 minutes. Cool and store in an airtight container.
