
Almond and orange zest biscotti
Description
Perfect with tea and coffee. For variety, you can add other nuts or dried fruits to the recipe. Serve cooled or slightly warm.

Step 1

1. Preheat the oven to 175 degrees. Line a large baking sheet with parchment paper or a silicone baking mat. Whisk the egg in a bowl. Chop or grind the almonds. In another medium bowl or large measuring cup, mix the flour and baking powder. Melt the butter in a large saucepan over low heat. Remove the saucepan from the heat and stir in the sugar and salt. Mix in the eggs, adding one egg at a time. Add the vanilla extract, liqueur, and orange zest. Gradually add the flour mixture and almonds, stirring to combine.

2. Divide the dough in half. Shape each part into a rectangle about 2 cm in height and 5 cm diagonally. Place on the prepared baking sheet. Using a brush, coat the rectangles with egg white. Bake for 30 minutes until golden brown. Let cool on a rack for 30 minutes.

3. Cut each rectangle diagonally into 1 cm thick slices. Place the biscotti cut-side down on a baking sheet. Bake for 11 minutes, then flip over with tongs and bake for 7 minutes more, until the edges are golden brown. Let cool on a wire rack.
