
Chicken biryani
Description
The dish is prepared without unnecessary complications. "Biryani" can be made not only with chicken; the recipe has long been modernized and is now prepared with pork, beef, seafood, and vegetables. You can use meat on the bone or just the flesh. The dish is served hot, and you can even eat it with your hands, as they do in India. The finished dish can be served at the table.

1. Place the rice in a bowl, pour water over it, and rinse thoroughly. Repeat the process several times until the water becomes clear.

2. Wash the chicken thighs, cut each one lengthwise along the bone, season with salt and pepper. Sear the meat in a pan until golden brown, then transfer to a plate.

3. Finely chop the onion and ginger root, sauté them in the pan used for frying the chicken, then add cardamom and turmeric. Add the rice to the pan, mix well, then add the chicken meat, raisins, cinnamon, bay leaf, and pour in water or broth.

4. After the liquid comes to a boil, reduce the heat, cover the pan with a lid, and cook for 15–20 minutes (until the rice is tender). Once cooked, let the dish rest for 5–7 minutes.

5. Remove the bay leaf and cinnamon from the pilaf. In a separate skillet, sauté the nuts and add them to the pilaf. Serve the dish immediately, garnished with coriander.
