Description

The recipe won't take much time. If you've ever been to Poland, you've most likely tried this delicious dish, although it's not definitively known which country is the true origin of pork bigos. For this reason, various versions of this dish are also found in Lithuania and several Slavic countries such as Belarus and Ukraine. In the classic pork bigos recipe, sauerkraut is typically used, but versions made with fresh cabbage also exist, like this one, for example. In fact, there are no strict rules for preparing bigos, so feel free to add mushrooms, beans, or other vegetables—this will give the dish a new, unique flavor. Serve hot.

    First, we need to place the frying pan on the stove and heat it well. Then cut the fat into small pieces, place them in the pan, and render the fat.

    Peel the onion and finely chop it. Place it in a frying pan with rendered fat and fry until translucent.

    Cut the pork into small cubes and fry the meat together with the onion for about 7-8 minutes.

    Peel the carrots and grate them on a coarse grater, then transfer to the frying pan and fry everything together for a few more minutes.

    Then add tomato paste to our ingredients and pour in a little water, simmer everything for about 5 minutes.

    After that, shred the cabbage and place it on top of the meat. If all the cabbage doesn't fit, wait until it shrinks a bit while cooking, then add the rest. Cover the pan with a lid and simmer over low heat for about 40–60 minutes.

    While the bigos is cooking, we'll prepare the smoked meats, which give the dish its special aroma and flavor. So, place the diced bacon into the heated oil and fry for a couple of minutes.

    Add the sliced sausage to the brisket and fry everything until a golden crust forms.

    Pour the smoked meats with tomato juice and simmer for 5 minutes, covered.

    When the cabbage is almost ready, add the smoked meat and mix everything together.
