    Separate the ribs and, if necessary, cut into portion-sized pieces. Rinse and pat dry with a paper towel.

    In a cauldron or any deep thick-bottomed pot, heat the oil, add the ribs, season with salt, and sear on all sides until golden brown.

    Add the chopped onion and carrot (you can use any cut).

    Fry everything together, stirring occasionally, for about 7-10 minutes.
