Description

The recipe won't take much time. Since there are many different ways to prepare this dish, everyone can choose something to their liking, as you can use absolutely any meat, as well as mushrooms and various vegetables. In any case, bigos turns out very tasty and aromatic. For true gourmets, I'd like to suggest this recipe for preparing beef bigos. This dish has a rich composition, making it very hearty and quite unique. It's unlikely that any of your family members will be disappointed if you decide to cook beef bigos at home for dinner, as the taste of this dish is truly royal—just give it a try. Serve hot.

    First, soak the mushrooms in hot water (3 cups) for about 15–20 minutes. Then drain the water into a saucepan (we will use it later), cut the mushrooms into fairly large pieces, and strain the mushroom broth well.

    We wash the meat and cut it into cubes, and slice the sausage slightly smaller.

    Now heat a cast-iron skillet and fry the bacon until golden brown, then transfer it to a plate. Using the fat rendered from frying, sauté the sausage and also transfer it to the plate.

    Next, place the meat in the pan and fry it until it changes color and develops a golden crust, adding a little oil to the pan if necessary.

    Set the meat aside and sauté diced onion in a skillet until golden brown.

    Shred the fresh cabbage and place it in a pan with the mushrooms on top of the fried onions. Simmer everything under a lid for 10 minutes, stirring occasionally.

    Then we drain the sauerkraut and add it to the pan with the other ingredients, pouring in the strained mushroom broth.

    Add the fried meat, bacon, and sausage to the skillet, along with diced tomatoes, juniper berries, spices, and salt to taste. Mix everything together, bring the liquid to a boil, then cover the skillet with a lid and place it in a preheated oven at 150 degrees Celsius for 3 hours. Periodically stir the bigos and, if necessary, add water to the skillet.

    After the time has elapsed, serve the hot dish with sour cream and rye bread.
