
Sauerkraut Bigos
Description
I make a lighter version of sauerkraut bigos without adding smoked meats. Tomato paste pleasantly refreshes the sauerkraut bigos; in summer, I use grated fresh tomatoes instead of paste. Often, instead of fatty pork ribs, I use leaner pork. Bigos is my favorite dish when I need to feed a group of men. Cut the pork into pieces.

Cut the onion.

Sear the meat in heated oil over high heat until golden brown. Add the onion and sauté for another 10 minutes, stirring constantly. Pour in a glass of water, reduce the heat, and simmer the meat for half an hour.

Add sauerkraut. Since my sauerkraut already contains a lot of carrots, I don't add fresh ones.

Add cabbage, tomato paste diluted with water, and simmer covered for 10 minutes.

Add pitted prunes, herbs, spices, and salt 10 minutes before completion.
