Prepare the meat and the necessary spices.

Finely chop the garlic, chervil, and sage. Strip the leaves and flowers from the thyme stems.

Place the herbs and garlic in a mortar, add salt and pepper.

Slightly mash and add three tablespoons of olive oil.

Now rub everything finely, very finely.

Place the beef on a kitchen towel, arranging it so that the fibers are vertical.

Wrap the meat in a towel and carefully pound it.

Remove the towel, shape the steak with your hands, and place half of the herb sauce on the beef.

Heat 2 tbsp of olive oil in a skillet and fry the beef. First, sear it with the spices facing down, while placing the second portion of spices on top and along the sides.

Place the seared meat in a baking dish and wrap it in foil. Bake in the oven for 5 minutes at 220 degrees. After baking, let the steak rest in the foil for 5 minutes.
