Chopped steak with egg

Description

Finely chop the beef, season with spices and cream. Form the steaks using a ring and fry on a hot skillet. Fry the eggs separately. Before serving, place the fried egg on top of the steak.

    Take beef tenderloin; ideally, it should be marbled, but I used what I had in my refrigerator.

    For convenience, you can first cut the meat into longitudinal pieces or slices, and then chop them with a cleaver. This way, the steak will turn out very juicy and tender—the meat will retain all its juices.

    After chopping the meat, season it with salt, pepper, and your choice of herbs and spices. I used a bit of cumin, crushed rosemary, and paprika. Optionally, you can add some minced garlic. Then mix the meat with either heavy cream—in which case also add finely minced onion—or broth. If using broth, omit the onion, as the broth will absorb well on its own. I always add the broth or cream by eye, until the mixture reaches a mashed-potato-like consistency.

    Mix everything thoroughly. Then start shaping the patties. I cut a ring from a plastic bottle—it turned out to be very convenient. By the way, for children, you can make smaller diameter patties.

    Before placing the steaks on the pan, you should freeze them slightly; otherwise, you won't be able to carry them to the pan in one piece. Fry on the pan depending on how well-done you want your steak. For medium doneness, 7-8 minutes will be enough.

    In a pan, separately from the steaks, fry the egg until only the white is cooked, then place the fried egg on top of the steak. It turns out very juicy and filling.
