
Beefsteak from minced meat in the oven

Today we're going to talk about preparing a large, delicious, and juicy steak! For this dish, you'll need beef tenderloin. I used regular chilled beef meat. It also turns out very tasty, although, of course, not as tender as when using tenderloin. In either case, the meat should be washed and dried. Trim off all the membranes and tendons, then cut the meat into thin strips first. Next, cut the strips into small cubes, as shown in the photo.

Next, the chopped beef needs to be salted.

Knead very carefully by hand (for no less than 5–7 minutes), as if you were kneading dough, until the meat fibers begin to slightly stick together. This is a very important step! If you don't knead the meat thoroughly enough now, your steak may fall apart later!

Then the well-pressed beef should be shaped into a ball and pounded against a cutting board for 1-2 minutes. To keep the kitchen clean, you can place the meat in any plastic bag and pound your future steak through the bag.

After all our efforts, we have a pounded piece of minced beef ready to be shaped into a steak. But before that, we need to preheat the oven to 180–200 degrees to cook our steak to the desired doneness.

Now that all the preparatory steps are finally complete, it's time to make our steak! Using hands and a knife slightly dampened with water, shape a large patty about 1-1.5 cm thick and as wide in diameter as the amount of prepared minced meat allows.

Heat a small amount of olive oil in a skillet, then place our steak onto the hot skillet. Attention! It's extremely important not to put the steak on a cold skillet! You can ruin everything! The meat must "seal" immediately upon contact with the hot surface, so the temperature must be adequate.

After 2-3 minutes, flip the steak in the pan and sear the other side for another 2-3 minutes.

Transfer the meat to a small baking sheet (or simply to a pan with a non-flammable or no handle) and cook in a preheated oven at 180 degrees until desired doneness is reached (usually no more than 5 minutes, but for those who prefer it rare, 2-3 minutes will suffice).

And while the steak is finishing cooking, we'll wash the frying pan, pour a small amount of vegetable oil onto it, and fry one egg, adding a little salt after it's cooked.
