Bhaji
Description
The dish is prepared without unnecessary complications. The base of these patties is onion, to which a little potato, lentils, and chickpeas are also added. But I don't use legumes, as they overpower the onion flavor, which here is simply delicious. Recipe: the finished dish can be served.
Instructions

Step 1

Prepare all the necessary ingredients. Peel the onion and garlic, then rinse them under running water. Prepare all the spices. Note: if you don't like such a large amount of spices, you can reduce their quantity or omit some of them.

Step 2

The onion needs to be finely chopped. According to the classic recipe, it should be grated on a grater. But I decided not to torture myself and chopped it in a blender instead. It's very convenient! Let the onion sit for a while to release its juice, then squeeze it well.

Step 3

Mix the onion with grated and squeezed potato (yes, I grated the potato, afraid that the blender wouldn't chop it finely enough). Then add the egg, salt, and all the prepared spices. Mix the mixture well.

Step 4

Form small patties from the onion mixture and place them on a frying pan with heated vegetable oil. I recommend making one patty first and frying it; if it holds together well and doesn't fall apart, then proceed with frying the rest. If it does fall apart, add a couple of tablespoons of flour to the mixture.

Step 5

Serve the ready-made patties with your favorite side dishes. I recommend pouring different sauces over them – it will be even more delicious!
