
Meringue in the microwave
Description
I think everyone loves these sweet, white, airy little cakes—my kids are definitely ready to eat them around the clock :) The taste of meringue made in the microwave differs from the oven-baked version. But still—it's delicious and sweet :) I've relied on this simple microwave meringue recipe many times—when guests are practically at the door, or when the kids suddenly crave something sweet. These cookies also work wonderfully as a layer in many cakes. Making meringue the traditional way takes a long time, but if you arm yourself with a microwave and keep this easy microwave meringue recipe in mind, you'll have a wonderful dessert ready in just minutes :) Try it, experiment—and you'll succeed!

Pour the powdered sugar into the bowl in which you will prepare the meringue base. Separate the egg white from the yolk (you won't need the yolk).

Pour the egg white into the powder and thoroughly mix and rub.

We rub for about 5 minutes. We'll get a light and relatively thick mixture. Nothing like what you get when beating with a mixer.

For some reason, sometimes I get a thick mixture, and sometimes I don't. I'm not sure what affects this. If the mixture is thick, simply roll it into small balls and place them on parchment paper, arranging them to fit the size of your microwave plate. If the mixture is not thick, squeeze it out using a syringe or just spoon it onto the parchment, leaving some space between each piece. Microwave for 1–1.5 minutes (mine are ready in 1 minute) at 750 watts. When baking for the first time, keep an eye on the process—meringues may cook faster in the center and burn. After the time is up, do not open the microwave door for another minute—the meringues will continue to set :)
