Description
Caramel chewy meringue is a real treat for kids. Serve it for dessert at lunch, dinner, or afternoon snack—it can be stored for about 3–4 days after preparation.

Separate the yolks from the whites; use the yolks in another recipe. Be careful not to let even a drop of yolk get into the whites.

Pour the sugar into a cauldron or saucepan, add water, and melt the mixture until it turns caramel-colored, about 3-5 minutes.

Pour the egg whites into the bowl of a food processor and start beating at the highest speed for about 3-4 minutes.

The egg whites should whip into a high, fluffy foam.

Without stopping, pour the sugar syrup and lemon juice in a thin stream into the protein mixture while whisking.

Using a pastry bag, pipe the meringue mixture onto parchment paper previously placed on a baking sheet. Preheat the oven to 80 degrees, place the baking sheet inside, and dry the meringues for about 1.5 hours.
