Meringue with caramel
Description
The dish is prepared without unnecessary complications. If you haven't tried meringue with caramel yet, be sure to make it. You can stick to just half of the recipe, without the whipped cream topping, but the full version is much tastier. Follow the step-by-step recipe and everything will turn out perfectly. The finished dessert can be served immediately.
Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Carefully separate the egg whites; the yolks will not be needed in this recipe.
- 3
Step 3

Beat the egg whites with a teaspoon of lemon juice into a fluffy and soft foam. Then gradually add 120 grams of sugar and continue beating.
- 4
Step 4

Beat egg whites with sugar into a stiff foam, add starch and vanilla sugar, then beat again.
- 5
Step 5

Transfer the whipped mixture into a pastry bag and pipe onto baking paper in the form of circles 8-10 cm in diameter. Bake at a minimum temperature of 65 degrees for 40-45 minutes. If it's difficult to adjust the temperature to the required level, you can bake with the oven door slightly open.
- 6
Step 6

While the meringue is baking, prepare the caramel by adding sugar to a saucepan.
- 7
Step 7

Heat the sugar over low heat until it turns caramel-colored, without stirring.
- 8
Step 8

Add sour cream or heavy cream to the hot caramel. Be careful, it may splatter. Mix everything well.
- 9
Step 9

Add butter to the caramel and melt it over heat, then cook the caramel until it thickens.
- 10
Step 10

Strain the caramel through a sieve to remove any lumps, then cool.
- 11
Step 11

Toast the nut kernels in a dry skillet, then chop them.
- 12
Step 12

Whip the whipping cream with powdered sugar until thickened.
- 13
Step 13

Turn the ready meringue upside down, transfer the whipped cream into a piping bag, and spread a layer of cream onto the inverted meringue.
- 14
Step 14

Sprinkle the whipped cream with chopped nuts.
- 15
Step 15

Pair the meringues together.
- 16
Step 16

Transfer the caramel to a piping bag and drizzle a caramel lattice over the meringue. The caramel meringue cookies are ready—tender, delicious, and absolutely delightful. A perfect accompaniment to coffee.
