Wash the eggs with soap. Separate the whites from the yolks. The yolks will not be needed for this recipe.

Add sugar and citric acid.

Lightly beat the egg whites with sugar and lemon acid to combine. Pour water into a saucepan and bring to a boil. Then reduce the heat. Place a bowl with egg whites and sugar over the saucepan with hot water, making sure the bottom of the bowl does not touch the water. Beat for 10 minutes until the mixture thickens and increases in volume. Then remove the bowl from the double boiler and continue beating for another 3–4 minutes. You should get a slightly thick, airy, and dense meringue similar to marshmallow.

Add green food coloring to the meringue. Mix well.

Using a piping bag with a tip, pipe Christmas tree shapes made of meringue onto a baking sheet lined with parchment paper.
