
Meringue from aquafaba
Description
You need to whip aquafaba for a long time using a powerful mixer; a blender whisk attachment won't work. Aquafaba from chickpeas works best. Tapioca starch can be replaced with cornstarch. The meringues turn out light, crispy, and very sweet.

Prepare all the ingredients.

Pour the aquafaba into a bowl. Start beating at a slow speed, gradually increasing to the highest speed.

When the aquafaba doubles in volume, start gradually adding the powdered sugar and starch.

Beat the mixture for about 15 minutes until soft peaks form.

At the end, add apple cider vinegar and food coloring.

Pipe the mixture onto a silicone mat or baking paper, leaving a small space between each. Bake the meringues in a preheated oven at 125 degrees for about 1 hour. You can open the oven and check the meringues—they will not collapse.
