
Meringue for decorating cakes and pastries
Description
The recipe won't take much time. The easiest and quickest way to decorate cakes is with meringue. However, not all recipes produce meringue that won't melt on cream. With this recipe, the meringue turns out very tasty, light, and doesn't melt on fondant or creams. You can also experiment with colors using different food colorings. Serve chilled.

1. Take two parts of sugar for every one part of egg white. I ended up with 80 grams of egg white and used 160 grams of sugar.

2. Mix everything well and place over a water bath. Constantly stirring, wait until the sugar dissolves completely.

3. Beat with a mixer until a white, thick, glossy mass forms.

4. Apply food coloring to the piping bag, then place the egg white mixture inside.

5. Pipe the meringue onto a baking sheet lined with parchment paper using a pastry bag. Place it in a cold oven, turn the oven on to 70°C (158°F), and leave the door slightly ajar. Dry the meringue for 2 hours. Then turn off the oven and leave the meringue inside for another 5 hours.
