
Rye bread without yeast in a multicooker
Description
The baking process is simple and quick. Sourdough rye bread made in a multicooker is very tasty and has a unique, distinctive aroma! Prepared with sourdough starter, it is rich in various beneficial substances such as amino acids, vitamins, and minerals. It is gentler on the digestive system and significantly healthier than bread made from wheat flour. Sourdough is the oldest method of bread-making. Nowadays, starter can be purchased in many stores, but it's better to make it yourself. Homemade bread is worth baking, even though it takes considerable time—still, the result will delight you. Serve it with tea or coffee.

1. Put the malt, salt, raisins, cumin, and coriander into a cup or other container. Boil water and pour 120 ml of boiling water into the cup. Stir and let stand until completely cooled.

2. Pour the remaining water into a deep bowl, add the starter, and mix. Add 4 tablespoons of rye flour and stir thoroughly. Let it stand for 10–15 minutes until bubbles appear on the surface.

3. Next, mix the mixture, add the oil and the cooled contents of the cup from step one, and thoroughly mix everything. Add all the rye flour and knead the dough well; it should be soft and sticky.

4. Sift half of the wheat flour onto the work surface and knead the dough. Return it to the bowl and cover with a towel or plastic wrap. Let it rest for 45 minutes to rise.

5. When the dough has risen, turn it out onto a surface dusted with the remaining sifted wheat flour. Knead thoroughly until it becomes elastic and smooth. Lightly dust the inner pot of the multicooker with flour, then transfer the dough into it. Sprinkle the top of the dough lightly with a little wheat flour. Close the multicooker lid and let the bread rise for 45 minutes.

6. After this time, make cuts on the dough with a sharp knife and let it rest (with the lid closed) for another 25 minutes.

7. Set the "Baking" mode and bake the bread for 1 hour, then turn it over and continue baking for another 25 minutes. Remove the baked bread from the multicooker bowl, cover with a towel, and let it cool. Your yeast-free rye bread in the multicooker is ready!
