
Sourdough bread without yeast

First, you need to make a starter. Start by mashing a handful of raisins with a masher, then add water, flour (half a cup), and honey. Mix well, transfer to a jar, cover it with a cloth, and place in a warm spot.

On the second day, strain the starter, add more flour and a little water so that the starter reaches a sour cream-like consistency, and place it back in a warm spot. The next day, your starter will be ready. Use half of the starter to make bread, and store the other half in the refrigerator.

Now you can start kneading the dough. Combine water, honey, salt, and starter, and mix well. Then add various spices. Next, pour in the sunflower oil, mix, and add the sifted rye flour. The dough should be thick.

Generously flour the work surface and place the dough on it. Sprinkle the top with flour and start kneading. It is essential to use flour, as the dough will stick heavily to your hands. The ideal consistency is when the dough is sticky inside but dry on the outside.

Shape the dough into a ball and place it in a greased baking pan. You can sprinkle the top with sesame seeds or make slashes like on a baguette. Let the dough rise for 1 hour.

After the bread has risen, place it in the oven for 40-60 minutes. The baking temperature should be 220-230 degrees. And under no circumstances should you open the oven during the first 20 minutes.
