
Kefir-based yeast-free dough
Description
Perfect for tea and coffee. 1. First, add baking soda to the kefir and mix well. If the kefir is not sour enough, you can additionally neutralize the soda with lemon juice or vinegar, or simply use baking powder instead. 2. Crack the eggs into a separate bowl. Add salt and sugar. The amount of sugar depends on the filling (a pinch for savory fillings and 2–4 tablespoons for sweet ones). 3. Beat the eggs thoroughly, then add oil. You can use either melted butter or odorless vegetable oil. 4. Pour the egg mixture into the kefir and mix well. 5. Gradually add flour, first mixing with a spoon, then transferring the dough onto a floured surface and kneading by hand. 6. When the yeast-free kefir dough is ready, cover it with a towel and let it rest for 10–15 minutes. After that, you can start working with it, using any filling of your choice. Serve warm or chilled. Perfect with tea.
