Perfect for serving with tea and coffee. Using this recipe for yeast-free dough, you can prepare a variety of baked goods—not only buns, but also rolls, pancakes, crackers, and donuts. Serve cooled or slightly warm.

    The base of our dough is flour, so if you want your baked goods to turn out tender and delicious, use high-grade wheat flour of fine grind from trusted brands. Sift the flour through a sieve into a clean bowl. This way, the flour not only becomes enriched with oxygen from the air, but also gets rid of lumps, which in turn improves dough kneading and enhances its quality.

    Take the butter out of the refrigerator and place it on a cutting board. Using a kitchen knife, cut it into small cubes and transfer them to a clean, dry plate. The butter should melt on its own, but remain slightly cool. If we add butter that is too melted to the flour, the dough may turn out greasy to the touch. Important: when making yeast-free dough, butter must not be melted over heat or in a microwave oven under any circumstances.

    Sift the flour into a deep bowl and, using a tablespoon, add the butter into the same container. Using a mixer at medium speed, blend the two ingredients until smooth.

    Then, pour the kefir from the glass into a separate container and add salt and baking powder to this ingredient. Using a hand whisk or a tablespoon, thoroughly mix these ingredients into the kefir liquid. It is desirable that the baking powder completely dissolves in the kefir.

    Now pour the kefir mixture into the container with the creamy-flour mixture and thoroughly mix all the ingredients using a tablespoon.

    Next, place the yeast-free dough on a floured surface and knead thoroughly with your hands. The dough should become firm and elastic. Shape the kneaded dough into a ball and return it to the bowl. Cover the bowl tightly with a lid or wrap it in plastic wrap to prevent drying. Then, place the bowl with dough in the refrigerator for 40–60 minutes. Chilled dough is easier to roll out and won't stick to your hands.
