
Non-yeast sourdough starter for bread

Perfect for tea and coffee. Let's prepare a yeast-free bread starter at home. Following the recipe below, you'll get a wonderful starter that will serve as an excellent base for whole grain bread. Typically, the starter takes 5–7 days to prepare, during which the "activation" process occurs. Happy cooking! Serve warm or chilled. Ideal with tea.

Into a clean, deep jar, add both types of flour. Mix well and pour in 120 ml of water. Stir again until smooth. Cover with a lid and place in a cool spot for two days.

After two days, the starter will significantly increase in volume and develop a characteristic smell. Remove half of the mixture (120 grams). Add another 30 grams of wheat flour and 30 grams of rye flour, then pour in 60 grams of water. Mix well and leave for another day in a cool place.

On the fourth day, repeat the procedure. On the fifth, sixth, and seventh days, the starter will become "active." Bubbles will appear on the surface, and a characteristic tangy smell, somewhat resembling kefir, should develop. Now you can start baking bread!
