
Non-alcoholic sbiten
Description
The recipe for non-alcoholic sbiten has been known since 1128, when it was first mentioned in chronicles. Sbiten was widely consumed throughout Rus and was almost the only hot drink available before the introduction of tea. It was used to keep warm during winter and to treat colds. Even today, you can find sbiten in restaurants and cafes serving traditional Russian cuisine, but it's better to prepare non-alcoholic sbiten at home. Moreover, it's very simple and quick—just half an hour, and a healthy, warming drink will be ready on your table.

Pour water into a saucepan and place over heat. Put about 2 tablespoons of honey into a bowl.

Add cinnamon and cloves to the honey, pour in a little syrup for flavor and aroma.

Combine the prepared mixture with hot water, stir everything, bring the liquid to a boil, then simmer for 20–25 minutes over low heat, stirring and skimming off the foam.

Now turn off the heat and strain the sbiten through cheesecloth. Pour the drink into cups and serve.
