
White chocolate cake
Description
Delicious baked treat for the whole family. Make a white chocolate cake at home. Decorate the cake with seasonal berries and fruits, a sprig of mint, and white chocolate shavings. If needed, the cake layers can be replaced with three sponge cakes. This cake is perfect for any festive table. Good luck!

Step 1

1. Preheat the oven to 180 degrees. Line three identical baking pans with parchment paper. Using a mixer or food processor, beat 220 g of room-temperature butter, zest of one lemon, half a cup of low-fat cream, and 3 cups of sugar until thick and smooth.

2. Sift 3 cups of flour into a bowl, add 1 teaspoon of baking powder and half a teaspoon of salt. Mix well.

3. Beat separately three egg yolks, buttermilk, vanilla sugar, and almond extract.

4. Beat three egg whites with a pinch of salt until stiff peaks form. Mix the flour mixture with the butter mixture, then add the egg whites and stir again until a smooth batter forms.

5. Divide the dough evenly among three pans and bake in a preheated oven for 20 minutes. Check cake doneness with a wooden toothpick. Remove the baked layers from the pans and let them cool.

6. To prepare the filling for spreading on the layers, place the jam in a saucepan, heat until it becomes liquid, add brandy, warm for a couple of minutes, then remove from heat. Strain through a sieve to remove pits and let cool. Alternatively, you can skip all these steps and simply spread the layers with your favorite jam, preserves, or berries mashed with sugar.

7. To make the buttercream, in a saucepan combine 10 egg whites and 2.5 cups of sugar. Dissolve the sugar in the egg whites over low heat, stirring constantly, making sure the mixture temperature does not exceed 60–70°C. Once the sugar has dissolved, remove from heat and beat the egg whites until stiff peaks form. This may take about 15 minutes, so be prepared to put in some effort. Once the mixture has cooled, begin adding room-temperature butter, beating at a slow speed. This part of the preparation will also take some time.

8. In general, when preparing the cream, I recommend leaving the mixer aside and taking a 15–20 minute break to attend to other matters. Then come back and start assembling the cake. So, spread the cream over the first cake layer, then add the filling.

9. Do the same with the second one. The last layer should only be coated with cream, and use the same cream to cover the sides of the cake.

10. Heat half a cup of cream until bubbles form, pour it over the chopped white chocolate, and stir until dissolved. Pour this mixture over the cake. All that's left is to cool the cake and serve. Enjoy!
